Named after a community-focused cafe in Dublin, this drink has a flavour profile that brings to mind berry compote and scones. It’s delicious as a single serving, or make a big batch and serve as a punch to share with friends. At Homeboy, we garnish it with a little raspberry dust, but at home a little lime flag perched on the side of the glass also works well.
Fumbally
Serves 1
30ml spiced rum – we use Bacardi Caribbean spiced rum
10ml decent cognac – we use Courvoisier VSOP
10ml vanilla liqueur – we use Galliano
10ml raspberry syrup (look for it in large supermarkets or online)
20ml fresh lime juice
1 drop anise tincture, or pastis
1 small pinch fine sea salt
1 lime slice or wedge, to garnish
Measure all the liquids into a shaker filled with ice, add a pinch of salt, then shake hard for 10 seconds. Strain into a coupe, garnish and serve.
